🍁Fall = comfort food, does it not? Enter my mom

🍁Fall = comfort food, does it not? Enter my mom’s homemade macaroni & cheese! Lots of requests for this ‘recipe’ after posting it on my stories last night. She used to make this for us when we were growing up and it definitely brings me back. It’s so easy and there isn’t an exact recipe I used but here’s how I made it:

*Ingredients*
3 cups cooked macaroni noodles
1 can @campbells tomato soup
1 Tbsp butter
2+ cups of cheddar cheese (I used @bothwellcheese old cheddar)
Salt + pepper to taste
.

*Directions*
1. After you’ve cooked & drained the pasta, mix together the butter, tomato soup, and salt & pepper with 1 cup of the shredded cheese.

2. Pour into a greased casserole dish and top with remaining shredded cheese (add as much as you like)! Bake at 350°F for about 20 mins until the cheese on top is melted & bubbly. ENJOY!!! 💜

Hi friends! Hope you are enjoying this summer weather so far ☀️. I wanted to share this picture I took earlier this year when I was practising some food photography. Dave picked up this store-bought cake and I figured I would dress it up a bit to snap some pictures. It was a white chocolate raspberry cake, which is as delicious as it sounds! I really wish I had a slice right now to eat on the patio! What’s one thing you’ve been doing with this extra time at home? (Watching more tv definitely counts too 😜)

Dinner is served! Roasted baby potatoes cooked in butter, garlic powder, onion powder, salt & pepper with Instant Pot pulled pork (recipe adapted from @mariloubiz ), and coleslaw. Such a classic summer meal!

Hump-day happy hour! 🍸 (I actually really dislike saying “hump-day” and would much rather refer to Wednesday as “mid-week” but it just didn’t have the same impact with happy hour 🤷‍♀️) Anyway, it’s a warm day out there today and I love a refreshing drink on the patio, anyone else?! 🍹 For me it’s as simple as mixing some orange juice with any type of sparkling flavoured water you like - @lacroixwater @bublywater @drinkspindrift ... you can even add a shot of your favourite liquor to *really* make it a happy hour!! Add some ice, a couple slices of a citrusy fruit and there you have it! Cheers! 🥂 .

Kitchen sink soup! This soup is a result of all the leftover veggies & rice in my fridge! That’s the beautiful thing about soup; you can literally put anything in it. .

To make it I chopped up zucchini, onion, garlic, carrots, and jalapeño & sautéed in @frescolio pesto infused olive oil. Then I added @muirglen fire roasted diced tomatoes (with the water) and a 1L container of chicken broth. Brought it up to a boil then added leftover cooked rice & chopped rotisserie chicken (I like to chop up a whole rotisserie chicken and pop it in the freezer for quick & easy meals like this)! I also added in some frozen peas, @betterthanbouillon and some fresh thyme, salt & pepper. After simmering for about 10 mins it was ready to serve! Couldn’t be easier!! Happy Friday friends! 🥰

I know I rave about the @yumandyummer cookbook (A LOT) but I haven’t met a recipe I didn’t like. That includes this Crunchy Asian Slaw that I made for a late dinner tonight! I started with a bagged cabbage coleslaw mix and added grated carrot, diced red bell pepper, green onion, cashews, peas, toasted sesame seeds, cilantro, and a delicious homemade dressing with all the right Asian-inspired flavours. 💯 Paired with these Maui ribs from @millersmeats , I’d say that’s a pretty wicked dinner!! .
