Seared Bok Choy

    Seared Bok Choy

This is a super-quick and light vegetable side dish that accompanies any main dish. The key is to do a quick sear on the bok choy and remove it from the pan once you start to see the grill marks so that it still has a crunch factor when you bite into it and is not mushy.

    Carrot Bundt Cake

    Posted in Desserts by

A fancy-looking, but super simple carrot cake with a smooth and velvety cream cheese icing!

    Carrot bundt cake

It was Dave’s 32nd birthday yesterday so I made him this delicious carrot cake to celebrate at home. He has been asking me to make him carrot cake for months so figured this was the perfect occasion. I actually used the bundt pan we received as a wedding shower gift for the first time! I love how fancy the cake looks but was actually so easy to whip up!

    Peanut Butter Monster Cookies

Every year for Christmas, our work has a bake sale fundraiser for a local charity. So naturally when I saw a cute little Christmas plate with these delicious looking monster cookies, I had to buy them. They were delicious and everything you’d expect a good cookie to be. So when I saw mini eggs in the store earlier this year I knew I wanted to create my own version of the cookie and here they are – just in time for Easter Monday!

    New Name!

    Posted in Uncategorized by

Hi friends – I’m so excited to share the news that Salad & Sandals is now The Modern Menu!!

This name change has been a long time coming – since the end of summer – and I’m feeling so anxious and nervous and happy all at once. If you know me, I have a hard time making decisions sometimes (a lot of the time 😬) and usually find myself stuck in “analysis paralysis” after researching pros & cons for what seems like forever. I really wanted to make this change for a couple reasons… I’ve been working hard at my photography and food styling skills and felt a shift in the way I wanted to portray that. I have been hoarding away a lot of my new food photos and recipes because they just didn’t seem consistent with my previous style. I’ve been wanting a new name that felt stronger & more professional and reflected the serious work I’ve been putting in behind the scenes. So here’s what I’ve come up with!! I’m excited to continue learning and growing and sharing delicious food. You’ll still see the same type of food-related content (nothing is changing in that aspect except to bring you more)! I have some big goals for 2020 so I can’t wait to get started on them! I am in the middle of transitioning my website so will post when it’s up & running.

With so much going on in the world right now I’m really trying to focus on what makes me happy and fuels my inner fire. So thanks for being here with me! Hope you are staying well. 💖

    Summer Citrus Salad

    Summer salad

Who is enjoying all this hot weather?! I know I am! When I think of summer I think of beach days, riding my bike, fresh fruit (hello fruit trucks!) and summer BBQ’s. I love the classic BBQ salad recipes – like pasta salad, potato salad, coleslaw – but I also like to try new recipes and experiment with different flavours.

    One-Pan Salmon Skillet

Posted in Dinner, Recipes, Whole30 by

Sometimes (ok, most times), I want a quick & healthy meal that will taste delicious but doesn’t require a lot of prep work or dishes. This is where the one-pan salmon skillet comes in! This gluten-free, dairy-free, sugar-free (aka Whole30 & Paleo) dinner comes together quickly with minimal effort. I like to use cast iron pans as much as possible because they don’t have any toxic Teflon coating, and they also add some iron to your food. The more you use your cast iron, the more of a non-stick coating it builds up, and makes it super easy to clean (just use a little hot water and scrub if necessary – no soap)! You can definitely make this dish on a sheet pan as well if you don’t have a cast iron pan.

    Lemon Almond Broccolini

    Lemon Almond Broccolini

I’m excited to share yet another easy recipe that couldn’t be simpler. Broccolini is a cross between broccoli and Gai-lan (Chinese broccoli) & just seems more elegant to eat! This dish is a great way to get your greens in. Super quick and easy to prepare!  I usually find broccolini at Sobeys near the packaged fresh vegetables and lettuce/salad mixes. If you can’t find broccolini you could also substitute regular broccoli, but I always like to try new vegetables! Expand your taste buds!

    Seared Tuna Tataki

Posted in Appetizers, Paleo, Whole30 by

Do you love sushi? If so, you will LOVE this tuna tataki appetizer!! I cannot encourage you enough to make this. I used to only eat sushi that had cooked fish, never raw. Sashimi was off the menu for me. I couldn’t handle the texture. But somehow that changed about a year or so ago. I tried a piece of sashimi that someone else had ordered and it was so amazing. Life changing. Well, as life changing as food can be. It was a gorgeous buttery texture. Dipping it in soy sauce/coconut aminos gives it that hint of saltiness that makes the flavour UNREAL. Now I can’t get enough of it. Even typing out this post is making me salivate and want to go eat some for lunch. I could seriously eat it every single day! I haven’t tried that but sounds like a good challenge, dontcha think?!

    Moroccan Salad

Posted in Lunch, Paleo, Salads, Sides, Vegan, Whole30 by

(aka “Salade Marocaine” or “Shlada” as the locals call it)

When I was in Morocco in 2016, this salad was everywhere and became one of the staples I ate almost daily. Most meals consisted of this salad and fresh bread. I was surprised at how similar it looked to Greek salad, but the spices definitely make it stand out on its own! Continue reading
