Fresh Tomato Bruschetta

Need an appetizer that you can whip up quickly, without spending a fortune? Have no fear – this fresh tomato bruschetta is the answer you’ve been looking for! Perfect for potlucks, dinner events, Superbowl parties, you name it! It has become my go-to… so much so that it’s almost time to come up with something else because I’ve made it SO MANY TIMES! And it has never failed me! Everyone loves it! What they don’t know is that it is 100% healthy (hello Whole30 peeps)!

 

 

It is so fresh and light but the flavour just blasts you away! I prepare my bruschetta the night before I need it to let all the flavours mix. It really needs that time to blend so don’t skip that part. Plus it makes the prep work so much quicker the next day! This was a family recipe that I tweeked a little. Serve with toasted baguettes, crackers, or as a topping for almost anything! Hope you enjoy it as much as I do!

A DELICIOUS quick & light appetizer!

Servings: 6 people

Ingredients
  • 6 Roma tomatoes
  • 4 green onions
  • 4-6 cloves of garlic (I use 6 because I LOVE garlic)
  • 4 tsp Italian seasoning blend (oregano, thyme, basil, rosemary)
  • 1 Tbsp parsley
  • 1 tsp salt
  • ¼ tsp pepper
  • ½ Tbsp apple cider vinegar
  • ¼ cup olive oil (I prefer the extra-light tasting one for this)
Instructions
  1. Dice the tomatoes and chop the green onion.
  2. Mix in the seasonings, garlic, apple cider vinegar, and oil. Cover & refrigerate overnight.
Recipe Notes

Serve with toasted baguettes or crackers! OR use it as a topping for chicken, rice, cod, or whatever else you desire!
