Seared Bok Choy

This is a super-quick and light vegetable side dish that accompanies any main dish. The key is to do a quick sear on the bok choy and remove it from the pan once you start to see the grill marks so that it still has a crunch factor when you bite into it and is not mushy.

It’s important that you wash bok choy well as small little bugs can get stuck in them. I always cut them in half first and then wash them really well before shaking the excess water off and blotting with a paper towel to dry.

This is a really quick & delicious side dish that is perfect year-round! It’s great on the BBQ in the summer as well as on a cast iron pan anytime!
