What better-suited recipe to start this all off, than a recipe containing part of the blog’s name – a salad!  Fresh figs are AMAZING and their sweetness really pops with this flavour combination. I look forward to the farm trucks in the summer that offer fresh & juicy figs!!

I love to make my salads with a variety of textures and flavours. Adding in nuts gives it a crunch factor, while the fruit gives it sweetness, and the feta gives it a little bit of saltiness. This is a super quick salad to whip up and bring to all your summer bbq’s!


Fresh Fig Salad

			A fresh & light summer salad!

			Ingredients
				- 142 g (container) arugula spring mix
 - 6 fresh figs
 - 1/2 cup walnuts
 - 2 mandarin oranges
 - 1/4 cup feta cheese (optional - omit for Whole30/Paleo)
 
Raspberry Balsamic Vinaigrette:
						- 1 cup fresh raspberries
 - 1/4 cup balsamic vinegar
 - 1/4 cup olive oil
 - 1 tsp dijon mustard
 - 1 tsp lemon juice
 - 1/4 tsp salt
 - 1/8 tsp pepper
 
Instructions
				- 
										Slice figs, chop walnuts, section off the mandarin & arrange over the arugula. Sprinkle with feta if desired.

										Blend the ingredients for the dressing altogether in a blender and drizzle over the salad! Super quick & easy - a summer flavour explosion in your mouth!!
